Seasoning:

  • 1 tablespoon Jamaican jerk seasoning

Vegetables:

  • 2 tablespoons olive oil, divided
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 small red onion, sliced
  • 3 cloves garlic, minced

Sauce:

  • 1 cup heavy cream
  • 1/2 cup chicken or vegetable broth
  • 1/2 cup grated Parmesan cheese
  • 1/4 teaspoon crushed red pepper flakes (optional)
  • Salt and black pepper to taste

Garnish:

  • Chopped fresh parsley or green onions

Instructions

  1. Cook the pasta: Prepare pasta according to package directions. Drain and set aside, reserving 1/2 cup pasta water.
  2. Season the shrimp: Toss shrimp with jerk seasoning. Cook in a skillet until pink and opaque. Set aside.
  3. Sauté vegetables: In the same skillet, sauté bell peppers, onion, and garlic until tender.
  4. Make the sauce: Add cream, broth, cheese, red pepper flakes, salt, and pepper to the skillet. Simmer until thickened.
  5. Combine: Add pasta, shrimp, and a splash of pasta water to the sauce. Toss to coat.
  6. Garnish and serve: Garnish with parsley or green onions before serving.
