Pasta:
- 12 ounces linguine or fettuccine pasta
Shrimp:
- 1 pound large shrimp, peeled and deveined
Seasoning:
- 1 tablespoon Jamaican jerk seasoning
Vegetables:
- 2 tablespoons olive oil, divided
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 small red onion, sliced
- 3 cloves garlic, minced
Sauce:
- 1 cup heavy cream
- 1/2 cup chicken or vegetable broth
- 1/2 cup grated Parmesan cheese
- 1/4 teaspoon crushed red pepper flakes (optional)
- Salt and black pepper to taste
Garnish:
- Chopped fresh parsley or green onions
Instructions
- Cook the pasta: Prepare pasta according to package directions. Drain and set aside, reserving 1/2 cup pasta water.
- Season the shrimp: Toss shrimp with jerk seasoning. Cook in a skillet until pink and opaque. Set aside.
- Sauté vegetables: In the same skillet, sauté bell peppers, onion, and garlic until tender.
- Make the sauce: Add cream, broth, cheese, red pepper flakes, salt, and pepper to the skillet. Simmer until thickened.
- Combine: Add pasta, shrimp, and a splash of pasta water to the sauce. Toss to coat.
- Garnish and serve: Garnish with parsley or green onions before serving.
