Bread:
- 4 slices sourdough or thick sandwich bread
Cheese Filling:
- 4 ounces cream cheese, softened
- 1/2 cup shredded cheddar cheese
- 1/2 cup shredded Monterey Jack cheese

- 2 jalapeños, seeded and finely chopped or sliced
- 2 slices cooked bacon, crumbled (optional)
- 1 tablespoon butter, softened
Instructions
- Mix Cheese Filling: In a bowl, combine softened cream cheese, cheddar, Monterey Jack, jalapeños, and bacon if using.
- Assemble Sandwiches: Spread the mixture on two slices of bread and top with the other slices to form sandwiches. Spread butter on the outsides.
- Cook: Heat a skillet over medium heat. Cook each sandwich for 3–4 minutes per side until golden and cheese is melted. Rest for 1 minute before slicing and serving.
