  • 3 cups cooked shredded chicken
  • 1 cup cooked rice or cauliflower rice
  • 1/2 cup buffalo wing sauce
  • 1/2 cup ranch dressing
  • 1/2 cup sour cream
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon paprika
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 1/2 cups shredded cheddar cheese (divided)
  • 2 jalapeños, thinly sliced (seeds removed for less heat)
  • 2 green onions, sliced

Instructions

  1. Preheat the oven: Preheat the oven to 375°F (190°C) and lightly grease a 9×9-inch baking dish.
  2. Mix the ingredients: In a large mixing bowl, combine shredded chicken, rice or cauliflower rice, buffalo sauce, ranch dressing, sour cream, garlic powder, onion powder, paprika, salt, pepper, and 1 cup of the cheddar cheese. Mix until fully combined.
  3. Layer and bake: Spread the mixture evenly into the prepared baking dish. Top with the remaining 1/2 cup of cheddar cheese and arrange sliced jalapeños over the top. Bake for 25–30 minutes until hot and bubbly.
  4. Rest and serve: Remove from oven and let rest for 5 minutes. Garnish with sliced green onions before serving.
