Brownie Base:
- 1/2 cup unsalted butter
- 1 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/3 cup unsweetened cocoa powder
- 1/2 cup all-purpose flour
- 1/4 teaspoon salt
- 1/4 teaspoon baking powder
Pecan Topping:
- 1/2 cup chopped pecans
- 1/4 cup light corn syrup
- 1/4 cup brown sugar
- 1/2 teaspoon vanilla extract
- pinch of salt
- 1 egg
Instructions
- Preheat the oven: Preheat the oven to 350°F (175°C) and prepare a mini muffin pan.
- Mix brownie base: Melt butter, then mix in sugar, eggs, and vanilla. Stir in cocoa, flour, salt, and baking powder. Spoon into muffin cups.
- Prepare pecan topping: Mix pecans, corn syrup, brown sugar, vanilla, salt, and egg. Spoon over brownie batter.
- Bake: Bake for 18–22 minutes until set. Cool before serving.
