For the Roasted Potatoes:
- 1 1/2 pounds baby potatoes, halved
- 1 tablespoon olive oil
- 1/2 teaspoon chili powder
- Salt and pepper to taste
Additional Toppings:
- 1 cup corn kernels (fresh or frozen)
- 1 cup black beans, drained and rinsed
- 1 cup cherry tomatoes, halved
- 1/4 cup chopped red onion
- 1 avocado, diced
- 1/4 cup chopped fresh cilantro
- Juice of 1 lime
Instructions
- Preheat the oven: Preheat the oven to 425°F.
- Roast Potatoes: Toss halved baby potatoes with olive oil, chili powder, salt, and pepper. Roast for 25–30 minutes until golden and tender, flipping halfway.
- Cook Beef: Brown and cook the ground beef in a skillet. Add chipotle peppers, smoked paprika, cumin, garlic powder, onion powder, salt, and pepper. Simmer for 5 minutes.
- Prepare Toppings: Warm corn and black beans in a pan.
- Assemble Bowls: Divide roasted potatoes into bowls. Top with chipotle beef, corn, black beans, cherry tomatoes, red onion, avocado, cilantro, and lime juice.
