Ingredients
Scale
Wet Ingredients
- 1 cup butter, softened
- 2 cups sugar
- 2 eggs
- 2 cups buttermilk (or 2 cups milk plus 2 tablespoons vinegar or lemon juice)
Dry Ingredients
- 4 cups flour
- 2 teaspoons baking soda
Cinnamon Topping
- 2/3 cup sugar
- 2 teaspoons cinnamon
Instructions
- Cream the Butter and Sugar: In a large mixing bowl, cream together the softened butter and 2 cups of sugar until the mixture is light, fluffy, and well combined. Then, add the eggs and beat thoroughly until smooth and consistent.
- Mix Wet and Dry Ingredients: Stir in the buttermilk (or milk combined with vinegar or lemon juice) until fully incorporated. In a separate bowl, whisk together the flour and baking soda. Gradually add the dry ingredients to the wet mixture, stirring gently until just combined to avoid overmixing.
- Prepare the Cinnamon Mixture: In another bowl, combine the 2/3 cup sugar with 2 teaspoons cinnamon. This mixture will add sweet, spicy layers to your bread.
- Layer the Batter: Grease your loaf pans thoroughly. Pour half of the batter evenly into each pan. Sprinkle about 3/4 of the cinnamon-sugar mixture over the batter in each pan. Add the remaining batter on top and sprinkle the rest of the cinnamon topping. Swirl gently using a knife to create cinnamon ribbons within the batter.
- Bake: Preheat your oven to 350°F (175°C). Place the loaf pans in the oven and bake for 45-50 minutes. The bread is done when a toothpick inserted into the center comes out clean, indicating it is fully cooked.
- Cool: Remove the bread from the oven and allow it to cool in the pans for 20 minutes. Then carefully remove from pans and place on a wire rack to cool completely before slicing.
Notes
- If you don’t have buttermilk, use milk combined with 2 tablespoons of vinegar or lemon juice as a substitute.
- Do not overmix the batter as it can make the bread dense and tough.
- Be sure to swirl the cinnamon sugar gently to create lovely marbled layers without mixing it completely into the batter.
- Use room temperature ingredients for better mixing and texture.
- Allow the bread to cool properly to avoid gummy texture when slicing.
