Instructions
- Preheat the Oven: Preheat the oven to 375°F and line a baking sheet with parchment paper.
- Mix Dry Ingredients: In a large bowl, whisk together the dry ingredients including flour, sugar, baking powder, baking soda, salt, and cinnamon.
- Add Butter: Cut in the cold butter until the mixture resembles coarse crumbs.
- Combine Wet Ingredients: In a small bowl, whisk together the egg, buttermilk, and vanilla extract. Add to the dry mixture and stir until just combined.
- Add Mix-Ins: Fold in currants or raisins and caraway seeds if using.
- Bake: Drop spoonfuls of dough onto the baking sheet, sprinkle with sugar, and bake for 12–15 minutes until lightly golden.
- Cool and Serve: Cool the cookies on a wire rack before serving.
