  • Salt and pepper, to taste

For the Mashed Potato Topping:

  • 2 ½ pounds Yukon Gold potatoes, peeled and cubed
  • ½ cup whole milk
  • 4 tablespoons unsalted butter
  • ½ cup sour cream
  • Salt and pepper, to taste

Instructions

  1. Prepare the Meat Filling: Preheat the oven to 400°F. Heat olive oil in a large skillet, sauté onion until translucent, add garlic, then brown the ground lamb. Stir in tomato paste, Worcestershire sauce, thyme, and beef broth. Add peas, carrots, and corn. Season with salt and pepper.
  2. Make the Mashed Potatoes: Boil potatoes until tender, then mash with milk, butter, sour cream, salt, and pepper.
  3. Assemble and Bake: Spread meat mixture in a baking dish, top with mashed potatoes, create texture with a fork, then bake until golden and bubbly. Cool slightly before serving.

Notes

  • You can substitute lamb with ground beef for a more traditional cottage pie.
