Ingredients
Scale
Honey Mustard Sauce
- 3 tbsp honey
- 3 tbsp Dijon mustard
- 1 tbsp olive oil
- 1 tbsp lemon juice
- 1/2 tsp garlic powder
- Salt and pepper, to taste
Salmon
- 1 lb salmon fillet, cut into bite-sized cubes
- 1 tbsp olive oil
- Salt and pepper, to taste
Vegetables
- 1 cup baby carrots, halved or sliced
- 1 cup broccoli florets
- 1 red bell pepper, sliced
- 1 tbsp olive oil
- Salt and pepper, to taste
Instructions
- Prepare Honey Mustard Sauce: In a small bowl, whisk together honey, Dijon mustard, olive oil, lemon juice, garlic powder, salt, and pepper until smooth and well combined to create the glaze for the salmon.
- Season Salmon: Cut the salmon fillet into bite-sized cubes, then toss them with 1 tablespoon olive oil, salt, and pepper to lightly season.
- Prepare Vegetables: In a large bowl, combine baby carrots, broccoli florets, and sliced red bell pepper. Toss with 1 tablespoon olive oil, salt, and pepper to coat the veggies evenly.
- Combine Salmon and Sauce: Add the salmon cubes to the honey mustard sauce and toss gently until the fish is fully coated.
- Preheat Oven and Arrange: Preheat your oven to 400°F (200°C). Arrange the vegetables in a single layer on a baking sheet lined with parchment paper or foil for easier cleanup. Place the coated salmon bites on top of the vegetables or on a separate sheet if preferred.
- Roast: Roast in the preheated oven for approximately 15-18 minutes, or until the salmon is cooked through and flakes easily with a fork, and the vegetables are tender but still crisp. You can stir the vegetables halfway through cooking to ensure even roasting.
- Serve: Remove from the oven and serve the honey mustard salmon bites over the roasted vegetables, garnishing with extra lemon juice or fresh herbs if desired for added brightness.
Notes
- For firmer salmon bites, avoid over-tossing to keep the cubes intact.
- You can substitute vegetables with zucchini, asparagus, or green beans based on preference.
- If you prefer a spicier glaze, add a pinch of cayenne pepper or chili flakes to the honey mustard sauce.
- Ensure the salmon is fresh and skin removed for the best texture when cubed.
- Serve with a side of rice or quinoa to make it a complete meal.
