Description

A flavorful and healthy Honey Mustard Salmon Bites and Veggies recipe combining tender salmon cubes glazed with a sweet and tangy honey mustard sauce, roasted alongside vibrant baby carrots, broccoli florets, and red bell pepper slices for a wholesome meal perfect for weeknight dinners.

Ingredients

Scale

Honey Mustard Sauce

  • 3 tbsp honey
  • 3 tbsp Dijon mustard
  • 1 tbsp olive oil
  • 1 tbsp lemon juice
  • 1/2 tsp garlic powder
  • Salt and pepper, to taste

Salmon

  • 1 lb salmon fillet, cut into bite-sized cubes
  • 1 tbsp olive oil
  • Salt and pepper, to taste

Vegetables

  • 1 cup baby carrots, halved or sliced
  • 1 cup broccoli florets
  • 1 red bell pepper, sliced
  • 1 tbsp olive oil
  • Salt and pepper, to taste

Instructions

  1. Prepare Honey Mustard Sauce: In a small bowl, whisk together honey, Dijon mustard, olive oil, lemon juice, garlic powder, salt, and pepper until smooth and well combined to create the glaze for the salmon.
  2. Season Salmon: Cut the salmon fillet into bite-sized cubes, then toss them with 1 tablespoon olive oil, salt, and pepper to lightly season.
  3. Prepare Vegetables: In a large bowl, combine baby carrots, broccoli florets, and sliced red bell pepper. Toss with 1 tablespoon olive oil, salt, and pepper to coat the veggies evenly.
  4. Combine Salmon and Sauce: Add the salmon cubes to the honey mustard sauce and toss gently until the fish is fully coated.
  5. Preheat Oven and Arrange: Preheat your oven to 400°F (200°C). Arrange the vegetables in a single layer on a baking sheet lined with parchment paper or foil for easier cleanup. Place the coated salmon bites on top of the vegetables or on a separate sheet if preferred.
  6. Roast: Roast in the preheated oven for approximately 15-18 minutes, or until the salmon is cooked through and flakes easily with a fork, and the vegetables are tender but still crisp. You can stir the vegetables halfway through cooking to ensure even roasting.
  7. Serve: Remove from the oven and serve the honey mustard salmon bites over the roasted vegetables, garnishing with extra lemon juice or fresh herbs if desired for added brightness.

Notes

  • For firmer salmon bites, avoid over-tossing to keep the cubes intact.
  • You can substitute vegetables with zucchini, asparagus, or green beans based on preference.
  • If you prefer a spicier glaze, add a pinch of cayenne pepper or chili flakes to the honey mustard sauce.
  • Ensure the salmon is fresh and skin removed for the best texture when cubed.
  • Serve with a side of rice or quinoa to make it a complete meal.
