Honey Mustard Sauce:

  • ¼ cup Dijon mustard
  • 2 tablespoons whole grain mustard (optional)

  • ½ teaspoon paprika
  • Salt and black pepper to taste

Veggies:

  • 1 pound baby red potatoes, quartered
  • 2 cups baby carrots
  • 2 cups green beans, trimmed

For Serving:

Instructions

  1. Preheat and Prepare: Preheat the oven to 400°F (200°C) or preheat grill to medium-high heat. In a small bowl, whisk together honey, Dijon mustard, whole grain mustard (if using), olive oil, garlic powder, paprika, salt, and pepper.
  2. Assemble Packets: Tear 4 large pieces of heavy-duty aluminum foil. Place one chicken breast in the center of each. Divide the potatoes, carrots, and green beans evenly among the foil packets, placing them around and slightly under the chicken.
  3. Season and Seal: Spoon 2–3 tablespoons of the honey mustard sauce over each chicken breast and drizzle a little over the veggies. Fold the foil over the chicken and vegetables, sealing tightly to create a packet.
  4. Cook: Place packets on a baking sheet and bake for 25–30 minutes (or grill for the same time), until the chicken reaches an internal temperature of 165°F and the vegetables are tender.
  5. Finish and Serve: Carefully open the foil packets, garnish with fresh parsley, and serve with extra sauce on the side.

  • You can swap vegetables based on what you have—zucchini, bell peppers, or broccoli all work well.
  • For extra caramelization, open the foil for the last 5 minutes of baking.
