Description

This Honey Dijon Rosemary Baked Chicken is a flavorful and easy-to-make dish that features tender chicken breasts coated in a sweet and tangy honey Dijon mustard glaze with fresh rosemary. Perfect for a weeknight dinner, this recipe combines simple ingredients to create a delicious, aromatic meal that pairs well with your favorite sides.

Ingredients

Scale

Glaze

  • 1/4 cup honey
  • 2 tablespoons Dijon mustard
  • 2 tablespoons whole grain Dijon mustard
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon soy sauce (or tamari for gluten-free, or omit entirely for strict gluten-free)
  • 2 cloves garlic, minced or grated
  • Salt and pepper to taste
  • 1/2 cup chicken broth (or water)

Chicken and Herbs

  • 1 pound boneless skinless chicken breasts (or chicken thighs)
  • 2-3 sprigs fresh rosemary

Instructions

  1. Prepare the glaze and marinate chicken. In a bowl, combine honey, both types of Dijon mustard, apple cider vinegar, soy sauce, minced garlic, salt, pepper, and chicken broth. Mix well to create a flavorful glaze. Toss the chicken breasts in this mixture ensuring each piece is well coated. Place the coated chicken in a baking dish.
  2. Add rosemary and bake the chicken. Insert the fresh rosemary sprigs between the chicken pieces in the baking dish to infuse the chicken with aromatic herbs. Preheat your oven to 350°F (180°C) and bake the chicken for 25-35 minutes or until it reaches an internal temperature of 165°F (75°C), ensuring it is cooked through and juicy.
  3. Serve with pan sauce. Once done, remove the chicken from the oven and spoon the pan sauce over the top before serving to add extra flavor and moisture to the dish.

Notes

  • Use chicken thighs instead of breasts for juicier meat.
  • Omit soy sauce or use tamari to make the recipe gluten-free.
  • Check internal temperature with a meat thermometer to avoid overcooking.
  • Serve with steamed vegetables or rice for a complete meal.
  • Leftover chicken can be stored in the refrigerator for up to 3 days.
