- 2 chipotle peppers in adobo sauce (minced)
- 1 tablespoon adobo sauce
- 3 tablespoons honey
- 1 tablespoon lime juice
- 2 cloves garlic (minced)
- 1 teaspoon smoked paprika
- 1/2 teaspoon cumin
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
For the Bowls:
- 2 cups cooked rice (white, brown, or cilantro lime rice)
- 1 cup corn kernels (fresh, frozen, or canned)
- 1 cup black beans (rinsed and drained)
- 1 cup diced tomatoes or pico de gallo
- 1 avocado (sliced)
- Fresh cilantro and lime wedges for garnish
Instructions
- Marinate the Chicken: In a bowl, mix chipotle peppers, adobo sauce, honey, lime juice, garlic, paprika, cumin, salt, and pepper. Marinate chicken in the mixture for at least 30 minutes.
- Cook the Chicken: Sauté marinated chicken in olive oil until cooked through and caramelized.
- Assemble the Bowls: Divide rice among bowls, top with chicken, corn, black beans, tomatoes, and avocado. Garnish with cilantro and lime wedges. Serve.
