Instructions
- Cook the Rice: In a large pot or saucepan, combine 4 cups of water and 2 cups of brown rice. Bring to a boil, then reduce heat to a simmer (medium low to low heat) and cover. Cook the rice for 45 minutes or until fully tender and all water is absorbed.
- Cook the Chicken: While the rice cooks, heat a large skillet over medium-high heat. Add 2 pounds of lean ground chicken and cook until no longer pink, about 6-8 minutes, breaking it up as it cooks.
- Add Vegetables to Chicken: To the cooked chicken in the skillet, add 2 cups chopped spinach, 1 large shredded carrot, and 1 small shredded zucchini. Stir and cook until the spinach wilts and vegetables soften, about 3-4 minutes.
- Cool Chicken Mixture: Remove the skillet from heat and set aside the cooked chicken and vegetable mixture to cool.
- Combine Rice and Chicken Mixture: Once the rice is done and the chicken mixture has cooled, stir them together in the pot or a large bowl to evenly combine.
