Description

This homemade egg noodles recipe offers a simple and satisfying way to create fresh, tender pasta from scratch using basic pantry ingredients. Perfect for soups, stroganoffs, or as a side dish, these egg noodles are rolled thin, cut to your desired shape, and cooked quickly for a delightful, comforting meal.

Ingredients

Scale

Dry Ingredients

  • 2 cups all-purpose flour
  • 1/2 tsp salt

Wet Ingredients

  • 2 large eggs
  • 1/4 cup milk
  • 1 tbsp melted butter

Instructions

  1. Make the Dough: In a bowl, combine the all-purpose flour and salt. Create a well in the center and add the eggs, milk, and melted butter. Mix all ingredients together until a shaggy dough forms.
  2. Knead the Dough: Transfer the dough onto a floured surface. Knead it for 8 to 10 minutes until the dough becomes smooth and elastic. Cover the dough with a cloth or plastic wrap and let it rest for 20 to 30 minutes to relax the gluten.
  3. Roll Out the Dough: Divide the rested dough into two equal portions. Roll each portion into a thin sheet approximately 1/8-inch thick using a rolling pin on a floured surface.
  4. Cut the Noodles: Using a sharp knife or pasta cutter, slice the rolled dough sheets into your desired noodle shape and width.
  5. Dry (Optional): If not cooking immediately, place the cut noodles on a floured surface and allow them to dry for 1 to 2 hours to prevent sticking.
  6. Cook the Noodles: Bring a pot of salted water or broth to a boil. Add the noodles and cook for 2 to 4 minutes until tender but still firm to the bite. Drain the noodles and serve with your preferred sauce or in soups.

Notes

  • Resting the dough is important to make it easier to roll and cut.
  • Use plenty of flour on your work surface to prevent sticking.
  • Drying noodles before cooking helps avoid clumping if you’re not serving them immediately.
  • Fresh noodles cook much faster than dried store-bought ones; keep an eye on cooking time.
  • You can customize the noodle width depending on the dish you’re preparing.
