Bean Mixture

Instructions
- Sear the Chicken: Heat 1 tablespoon of olive oil in a large skillet over medium heat. Season the chicken breasts with oregano, thyme, paprika, salt, and black pepper. Place the chicken in the skillet and sear for 5-6 minutes on each side until they develop a golden-brown crust. Remove the chicken from the skillet and set aside.
- Prepare the Bean Mixture: In the same skillet, add the remaining 1 tablespoon of olive oil. Sauté the minced garlic for about 30 seconds until fragrant. Add the cherry tomatoes and cook for 2 minutes until they soften slightly.
- Deglaze the Pan: Pour in the chicken broth and lemon juice, stirring to deglaze the pan and loosen any browned bits stuck to the bottom. This adds great flavor to the dish.
- Simmer the Dish: Stir in the cannellini beans and baby spinach. Cook for 2 minutes or until the spinach has wilted.
- Finish Cooking the Chicken: Return the seared chicken breasts back into the skillet. Let everything simmer together for 5-7 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) to ensure it is fully cooked.
