Instructions

  1. Sear the Chicken: Heat 1 tablespoon of olive oil in a large skillet over medium heat. Season the chicken breasts with oregano, thyme, paprika, salt, and black pepper. Place the chicken in the skillet and sear for 5-6 minutes on each side until they develop a golden-brown crust. Remove the chicken from the skillet and set aside.
  2. Prepare the Bean Mixture: In the same skillet, add the remaining 1 tablespoon of olive oil. Sauté the minced garlic for about 30 seconds until fragrant. Add the cherry tomatoes and cook for 2 minutes until they soften slightly.
  3. Deglaze the Pan: Pour in the chicken broth and lemon juice, stirring to deglaze the pan and loosen any browned bits stuck to the bottom. This adds great flavor to the dish.
  4. Simmer the Dish: Stir in the cannellini beans and baby spinach. Cook for 2 minutes or until the spinach has wilted.
