Chocolate Cake Layer

Chocolate Ganache

- 1/2 cup dark chocolate, chopped

Instructions
- Make the Raspberry Jelly: In a saucepan, combine fresh raspberries and sugar over medium heat. Cook until the raspberries break down and release their juices. Stir in gelatin to dissolve, then remove from heat and let cool. Refrigerate until set.
- Prepare the Chocolate Mousse: In a mixing bowl, whip 1 cup of heavy cream until stiff peaks form. Gently fold in the cooled, melted dark chocolate until fully combined and smooth to create the mousse.
- Assemble the Cake: Place the cooled chocolate cake layer as the base. Spread half of the chocolate mousse evenly over the cake. Add the set raspberry jelly layer over the mousse, then top with the remaining mousse layer.
- Make and Pour the Ganache: Heat 1/2 cup of heavy cream in a saucepan until it begins to simmer. Pour the hot cream over the chopped dark chocolate, stirring gently until completely smooth. Pour the ganache evenly over the assembled cake.
- Garnish and Chill: Decorate the top with fresh raspberries. Refrigerate the cake for at least 2 hours to allow all layers to set and flavors to meld before serving.
