Rice Paper Rolls:
- 8 rice paper wrappers
- 1 cup shredded red cabbage
- 1 cup shredded carrots
- 1 red bell pepper, thinly sliced
- 1 cucumber, julienned
- 1 avocado, sliced
- 1/4 cup fresh mint leaves
- 1/4 cup fresh basil leaves
- 1/4 cup chopped peanuts (optional)
- 1 tablespoon sesame seeds (optional)
Peanut Sauce:
- 1/4 cup creamy peanut butter
- 2 tablespoons soy sauce or tamari
- 1 tablespoon rice vinegar
- 1 tablespoon maple syrup or honey
- 1 teaspoon sesame oil
- 1 teaspoon grated fresh ginger
- 1 clove garlic, minced
- 2–3 tablespoons warm water (to thin)
Instructions
- Peanut Sauce: In a small bowl, whisk together peanut butter, soy sauce, rice vinegar, maple syrup, sesame oil, ginger, and garlic. Thin with warm water. Set aside.
- Roll Assembly: Soak rice paper wrapper in warm water until pliable. Layer veggies and herbs in the center, add peanuts and sesame seeds. Roll tightly like a burrito. Repeat with remaining wrappers.
- Serve: Serve rolls with peanut sauce for dipping.

- Rolls can be made ahead and refrigerated.
