For the Shrimp:
- 1 pound medium shrimp (peeled and deveined)
- 1 tablespoon olive oil
- 1 tablespoon taco seasoning
- juice of 1 lime
- 1/2 teaspoon garlic powder
- 1/4 teaspoon chili powder (optional)
- 1/4 teaspoon salt
For Assembling:
- 8–10 large butter lettuce leaves
- 1/2 cup cherry tomatoes (halved)
- 1/2 avocado (diced)
- 1/4 cup red onion (finely chopped)
- 1/4 cup fresh cilantro (chopped)
- 1/4 cup plain Greek yogurt or sour cream (for topping)

Instructions
- Marinate the Shrimp: In a bowl, toss the shrimp with olive oil, taco seasoning, lime juice, garlic powder, chili powder, and salt. Marinate for 10–15 minutes.
- Cook the Shrimp: Heat a skillet over medium-high heat. Cook the shrimp for 2–3 minutes per side until pink and opaque. Remove from heat.
- Assemble: Lay out lettuce leaves on a platter. Fill each with cooked shrimp, cherry tomatoes, avocado, red onion, and cilantro. Top with Greek yogurt or sour cream. Serve with lime wedges.
Notes
- For added crunch, top with crushed tortilla chips.
- Try adding black beans or corn for more substance.
