  • 1 teaspoon cinnamon
  • ½ teaspoon pumpkin pie spice
  • ¼ teaspoon salt
  • ½ cup dark chocolate chips

Instructions

  1. Preheat the oven: Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Mix wet ingredients: In a large bowl, whisk together the pumpkin puree, maple syrup, melted coconut oil, and vanilla extract until smooth.
  3. Combine dry ingredients: In another bowl, combine oat flour, baking soda, cinnamon, pumpkin pie spice, and salt.
  4. Mix wet and dry ingredients: Add the dry ingredients to the wet ingredients and stir until just combined. Fold in the chocolate chips.
  5. Bake: Scoop tablespoon-sized portions onto the prepared baking sheet, flattening slightly with the back of a spoon. Bake for 10–12 minutes, or until edges are set and tops look dry.
  6. Cool and serve: Cool on the baking sheet for 5 minutes before transferring to a wire rack.
