Ingredients

Scale

Muffin Batter:

  • 3 ripe bananas, mashed
  • 1/2 cup plain Greek yogurt
  • 1/4 cup honey or maple syrup
  • 1/4 cup coconut oil or melted butter
  • 2 large eggs
  • 1 teaspoon vanilla extract

  • 1/4 teaspoon salt

Optional Add-ins:

  • 1/2 cup chopped walnuts or mini chocolate chips

Instructions

  1. Preheat the oven: Preheat the oven to 350°F (175°C) and prepare a muffin tin with liners or by greasing lightly.
  2. Mix wet ingredients: In a large bowl, mash the bananas and mix in Greek yogurt, honey, coconut oil, eggs, and vanilla extract until smooth.
  3. Combine dry ingredients: In a separate bowl, whisk together whole wheat flour, baking soda, cinnamon, and salt.
  4. Combine wet and dry: Add the dry ingredients to the wet mixture and stir until just combined. Fold in walnuts or chocolate chips if desired.
  5. Bake: Divide the batter into muffin cups and bake for 18–22 minutes until a toothpick comes out clean.
  6. Cool and serve: Allow the muffins to cool in the pan for 5 minutes before transferring to a wire rack to cool completely.
