Ingredients
Scale
Bread and Butter
- 2 slices thick-cut sourdough bread
- 2 tbsp butter, softened
Cheeses
- 1/4 cup sharp cheddar cheese, shredded
- 1/4 cup brie cheese, sliced (rind removed)
- 1/4 cup goat cheese, crumbled
Additional Ingredients
- 1/4 cup caramelized onions
- 1 tsp Dijon mustard (optional, for added zing)
- Fresh thyme (optional, for garnish)
Instructions
- Preheat the skillet: Preheat a skillet or griddle over medium heat to ensure even cooking and perfect browning of the bread without burning.
- Butter the bread: Spread softened butter evenly on one side of each slice of sourdough bread. This will create a golden, crispy exterior when cooked.
- Assemble the sandwich: On the unbuttered side of one slice, layer the sharp cheddar, brie, and goat cheeses evenly, followed by the caramelized onions for sweetness. If using, spread a thin layer of Dijon mustard on the unbuttered side of the other slice for a subtle zing.
- Close the sandwich: Place the second slice of bread on top, buttered side facing outwards, ensuring the buttery sides are on the outside for grilling.
- Cook the sandwich: Place the sandwich in the preheated skillet. Cook for 4-5 minutes on each side, pressing gently with a spatula to help the cheese melt and bread toast to a golden brown color.
- Finish and serve: When the bread is crispy and cheese fully melted, remove the sandwich from the skillet. Slice it in half, garnish with fresh thyme if desired, and serve immediately while hot and gooey.
Notes
- To make caramelized onions, slowly cook sliced onions in a bit of butter or oil over low heat for about 20-30 minutes until deep golden and sweet.
- You can omit the Dijon mustard if you prefer a more traditional grilled cheese flavor.
- Using a mix of cheeses gives depth and creaminess; feel free to adjust cheese amounts based on preference.
- Pressing the sandwich gently while cooking helps achieve even melting and crispy bread.
