Description

A hearty and flavorful Ground Beef and Potatoes Casserole, combining tender pieces of potatoes, savory ground beef, and vibrant vegetables, all simmered to perfection in a skillet. This one-pan meal is spiced with paprika and cumin, making it a comforting and satisfying dish that’s perfect for a family dinner or a quick weekday meal.

Ingredients

Scale

Meat and Vegetables

  • 1 lb ground beef
  • 3 medium potatoes, peeled and diced
  • 1 red bell pepper, diced
  • 1 onion, finely chopped
  • 3 cloves garlic, minced

Seasonings and Liquids

  • 2 tbsp olive oil
  • 1 tsp paprika
  • 1 tsp cumin
  • Salt and pepper, to taste
  • ¼ cup beef broth or water (optional)

Garnish

  • Chopped green onions, for garnish

Instructions

  1. Heat Olive Oil: In a large skillet or Dutch oven, heat 2 tablespoons of olive oil over medium heat until shimmering.
  2. Sauté Onion and Garlic: Add the finely chopped onion and minced garlic to the skillet. Cook for 2-3 minutes, stirring occasionally, until the onion softens and becomes translucent.
  3. Cook Ground Beef: Add 1 lb of ground beef to the skillet. Break it apart with a spoon and cook for 5-7 minutes, stirring occasionally, until the beef is fully browned and no longer pink.
  4. Add Potatoes and Bell Pepper: Stir in the diced potatoes and diced red bell pepper, mixing them evenly with the beef and vegetables.
  5. Season the Mixture: Sprinkle 1 teaspoon each of paprika and cumin over the ingredients. Season with salt and pepper to taste, and mix well to combine all flavors.
  6. Add Broth or Water: Pour in ¼ cup of beef broth or water if using. This will help create steam and soften the potatoes during cooking.
  7. Simmer Covered: Cover the skillet with a lid and reduce heat to medium-low. Let the casserole simmer for 15-20 minutes, stirring occasionally, until the potatoes are fork-tender and have absorbed the flavors.
  8. Garnish: Remove from heat and sprinkle chopped green onions on top for a fresh, mild onion flavor and a burst of color.
  9. Serve: Serve the casserole warm as a satisfying and comforting main dish.
