- 1 cup cooked grits, cooled
- 1/2 cup shredded sharp cheddar cheese
- 1/2 lb grilled shrimp, chopped

- 1 egg, beaten
- 1/4 cup all-purpose flour

- 2 tbsp olive oil or vegetable oil for frying
Smoky Cream Sauce
- 1/2 cup sour cream
- 1 tsp smoked paprika
- 1 tsp lemon juice
- Salt to taste
Instructions
- Prepare the fritter mixture: In a large bowl, combine the cooled cooked grits, shredded sharp cheddar cheese, chopped grilled shrimp, sliced green onions, beaten egg, all-purpose flour, salt, and pepper. Mix everything thoroughly until well incorporated.
- Form fritters: Shape the mixture into approximately 8 small patties, ensuring they are compact enough to hold together while frying.
- Heat the oil: Place a skillet over medium heat and add the olive or vegetable oil. Allow it to heat up to a moderate temperature suitable for frying.
- Fry the fritters: Carefully place the fritters in the hot skillet and cook for 3 to 4 minutes on each side, or until each side is golden brown and the fritters are heated through completely.
- Make the smoky cream sauce: While the fritters cook, combine sour cream, smoked paprika, lemon juice, and salt in a small bowl. Mix well to create a smooth, flavorful sauce.
- Drain and serve: Once fried, transfer the fritters to paper towels to drain any excess oil. Serve them warm with the smoky cream sauce either on the side or drizzled on top as preferred.
