- 1 tbsp unsalted butter

- ½ fresh pineapple, peeled and sliced into bite-sized wedges
- 3 tbsp honey
- ½ tsp freshly cracked black pepper

Instructions
- Prepare and Grill the Bread: Preheat a grill or grill pan to medium-high heat. Brush both sides of the sourdough slices with olive oil. Grill each slice for 2–3 minutes per side until they are crisp and have nice grill marks. Remove and set aside.
- Caramelize the Pineapple: Melt the butter in a skillet over medium-high heat. Add the pineapple wedges and sear them for 2–3 minutes on each side until they’re golden brown and caramelized. Sprinkle lightly with a pinch of sea salt to enhance the flavor. Remove from heat.
- Make the Spicy Honey: In a small pan, gently warm the honey along with freshly cracked black pepper and red chili flakes. Heat just until the mixture is fragrant and fluid, being careful not to boil or burn the honey.
- Assemble the Crostini: Top each grilled sourdough slice with torn pieces of burrata cheese, placing one caramelized pineapple wedge on each. Drizzle the warm spicy honey over the top for a sweet and spicy kick.
- Garnish and Serve: Add fresh mint or basil leaves if desired for a refreshing herbaceous note. Finish with a sprinkle of flaky sea salt to add texture and an extra layer of flavor. Serve immediately while warm for the best taste and texture.
