Ingredients
Scale
Cupcake Batter
- 2 ½ cups all-purpose flour
- 2 tablespoons unsweetened cocoa powder
- 1 teaspoon baking soda
- ½ teaspoon salt
- ½ cup unsalted butter, softened
- 1 Âľ cups granulated sugar
- 2 large eggs
- 1 cup buttermilk
- 1 teaspoon white vinegar
- 1 teaspoon vanilla extract
- 2 teaspoons green food coloring
Cream Cheese Frosting
- 8 oz cream cheese, softened
- ½ cup unsalted butter, softened
- 3 cups powdered sugar
- 1 teaspoon vanilla extract
- 2 tablespoons heavy cream
Instructions
- Preheat & Prep: Preheat the oven to 350°F (175°C) and line a muffin tin with cupcake liners to prepare for baking.
- Mix Dry Ingredients: In a medium bowl, whisk together the all-purpose flour, unsweetened cocoa powder, baking soda, and salt until well combined.
- Cream Butter & Sugar: In a large mixing bowl, beat the softened unsalted butter and granulated sugar together until the mixture is light and fluffy, which helps create a tender cupcake texture.
- Incorporate Wet Ingredients: Add the eggs one at a time to the butter-sugar mixture, beating well after each addition to fully incorporate them and maintain the mixture’s smoothness.
- Add Flavor and Liquids: Stir in vanilla extract, buttermilk, and white vinegar until everything is evenly combined, allowing the acidity to react and tenderize the batter.
- Combine & Color: Gradually fold the dry ingredients into the wet mixture until just combined, being careful not to overmix, then stir in the green food coloring to evenly tint the batter.
- Fill & Bake: Divide the batter equally among the cupcake liners, filling each about three-quarters full to allow room for rising, and bake for 18-22 minutes or until a toothpick inserted into the center comes out clean.
- Cool: Remove the cupcakes from the oven and let them cool completely in the tin before transferring to a wire rack to finish cooling; frosting warm cupcakes can cause melting.
- Prepare Frosting: In a large bowl, beat the softened cream cheese and butter together until smooth and creamy, creating the base for the frosting.
- Add Sugar & Flavor: Gradually add the powdered sugar and vanilla extract, beating until the frosting is fluffy and well blended.
- Finish Frosting: Add the heavy cream and beat once more until the frosting is light, creamy, and perfect for spreading or piping.
- Frost Cupcakes: Using a piping bag or a spatula, apply the cream cheese frosting generously onto the cooled cupcakes.
- Decorate: Add sprinkles, gold dust, or edible glitter to garnish the cupcakes and give them a festive, eye-catching finish.
Notes
- Ensure the butter and cream cheese are softened before mixing to avoid lumps in the frosting.
- Do not overmix the batter once dry ingredients are added to prevent dense cupcakes.
- Allow cupcakes to cool completely before frosting to maintain frosting texture and appearance.
- Adjust food coloring quantity to achieve desired green intensity.
- Use room temperature ingredients for best mixing results.
