  • 1 pound large shrimp (peeled and deveined)

For the Orzo:

  • 1 cup orzo pasta

For the Sauce:

  • 2 tablespoons olive oil
  • 3 cloves garlic (minced)
  • 1 small red onion (diced)
  • 1 can (14.5 oz) diced tomatoes (with juices)
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon red pepper flakes (optional)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

For Garnish:

  • 1/4 cup Kalamata olives (sliced)
  • 1/3 cup crumbled feta cheese
  • 2 tablespoons chopped fresh parsley
  • juice of 1/2 lemon

Instructions

  1. Cook the Orzo: Cook orzo in salted boiling water until al dente. Drain and set aside.
  2. Prepare the Sauce: In a skillet, sauté garlic and red onion in olive oil until softened. Add tomatoes, oregano, red pepper flakes, salt, and black pepper. Simmer to blend flavors.
  3. Cook the Shrimp: Add shrimp to the skillet and cook until pink and cooked through.
  4. Combine: Stir in cooked orzo, olives, and lemon juice. Remove from heat and top with feta and parsley.
  5. Serve: Enjoy warm.
