- 1 can (14.5 oz) diced tomatoes (with juices)
- 1/2 teaspoon dried oregano
- 1/4 teaspoon red pepper flakes (optional)
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
For Garnish:
- 1/4 cup Kalamata olives (sliced)
- 1/3 cup crumbled feta cheese
- 2 tablespoons chopped fresh parsley
- juice of 1/2 lemon
Instructions
- Cook the Orzo: Cook orzo in salted boiling water until al dente. Drain and set aside.
- Prepare the Sauce: In a skillet, sauté garlic and red onion in olive oil until softened. Add tomatoes, oregano, red pepper flakes, salt, and black pepper. Simmer to blend flavors.
- Cook the Shrimp: Add shrimp to the skillet and cook until pink and cooked through.
