Instructions

  1. Preheat and prepare dish. Preheat your oven to 350°F (175°C). Grease a 9-inch pie dish or line it with parchment paper to prevent sticking.
  2. Cream butter and sugars. In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy. Then beat in the eggs one at a time, ensuring each is fully incorporated before adding the next. Stir in the vanilla extract for flavor.
  3. Mix dry ingredients and combine. In a separate bowl, whisk together the all-purpose flour, baking soda, and salt. Gradually add these dry ingredients to the butter mixture, mixing just until combined. Fold in the semi-sweet chocolate chips evenly.
  4. Form the bottom crust. Press half of the cookie dough evenly into the bottom and up the sides of the prepared pie dish, creating a base and sides that will hold the filling.
  5. Add Nutella filling. Spread the Nutella evenly over the cookie dough base, leaving about a 1/2-inch border around the edges for sealing.
  6. Top crust assembly. Drop spoonfuls of the remaining cookie dough over the Nutella layer and gently spread to cover it as much as possible, sealing the edges to encase the filling.
  7. Bake to golden perfection. Bake in the preheated oven for 30–35 minutes, until the top is golden brown and the center is set but still soft to ensure gooeyness.
  8. Cool and serve. Allow the cookie pie to cool for at least 10–15 minutes before slicing to maintain its gooey texture. Serve warm, optionally with vanilla ice cream or an extra drizzle of Nutella for indulgence.
