  • 4 garlic cloves, minced
  • 3 tablespoons olive oil
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon Italian seasoning
  • ½ teaspoon crushed red pepper flakes (optional)
  • 2 tablespoons grated Parmesan cheese (optional)

Instructions

  1. Preheat the oven: Preheat the oven to 425°F.
  2. Mix vegetables and seasonings: In a large mixing bowl, combine broccoli, cauliflower, bell peppers, zucchini, and red onion. Add minced garlic, olive oil, salt, pepper, Italian seasoning, and red pepper flakes if using. Toss to coat.
