Ingredients
Meat and Seasoning
- 2 chicken breasts, cubed
- 2 ribeye steaks, cubed
- 2 tbsp olive oil
- 4 cloves garlic, minced
- 1/4 cup grated Parmesan cheese
- 1 tsp Italian seasoning
- 1/2 tsp paprika
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish, optional)
Cheesy Loaded Mashed Potatoes
- 4 large russet potatoes, peeled and cubed
- 1/2 cup sour cream
- 1/4 cup milk (more if needed for consistency)
- 1/4 cup butter
- 1 cup shredded cheddar cheese
- 1/4 cup cooked bacon bits
- 1/4 cup green onions, chopped
- Salt and pepper to taste
Instructions
- Prepare the potatoes: Peel and cube the russet potatoes. Place them in a large pot and cover with water. Bring to a boil and cook until potatoes are tender, about 15-20 minutes. Drain and set aside.
- Cook the meat: While the potatoes are boiling, heat olive oil in a large skillet over medium-high heat. Add the cubed chicken and ribeye steak. Sprinkle with minced garlic, Italian seasoning, paprika, salt, and pepper. Cook until the meat is browned and cooked through, about 6-8 minutes. Stir in grated Parmesan cheese and remove from heat.
- Mash the potatoes: In a mixing bowl, combine the cooked potatoes, sour cream, milk, and butter. Use a potato masher or electric mixer to blend until smooth and creamy. Adjust milk quantity to reach desired consistency.
- Add cheddar and mix-ins: Fold shredded cheddar cheese, bacon bits, and chopped green onions into the mashed potatoes. Season with salt and pepper to taste. Mix until well combined.
- Assemble the bake: Preheat the oven to 375°F (190°C). In a baking dish, evenly spread the cooked garlic Parmesan chicken and steak mixture. Top with the cheesy loaded mashed potatoes spread evenly over the top.
- Bake the dish: Place the baking dish in the oven and bake for 15-20 minutes, or until the top is slightly golden and the cheese is melted and bubbly.
- Garnish and serve: Remove from oven and sprinkle with fresh chopped parsley if desired. Serve immediately and enjoy the hearty meal.
Notes
- For extra creaminess, warm the milk before adding to the potatoes.
- You can substitute ribeye steak with sirloin or your preferred steak cut.
- Use turkey bacon bits as a lighter alternative to regular bacon.
- Make sure to not overcook the meat to keep it tender and juicy.
- Leftovers can be refrigerated for up to 3 days and reheated in the oven for best results.
