For the Steak Bites:

  • 1 1/4 pounds sirloin steak, cut into 1-inch cubes
  • 3 tablespoons olive oil, divided
  • Salt and black pepper, to taste

For the Potatoes:

  • 1 1/2 pounds baby potatoes, halved
  • 4 tablespoons unsalted butter
  • 4 garlic cloves, minced
  • 1 teaspoon fresh thyme or 1/2 teaspoon dried
  • 1 teaspoon fresh rosemary or 1/2 teaspoon dried
  • Fresh parsley, chopped, for garnish


Instructions

  1. Cook the Potatoes: Heat 2 tablespoons of olive oil in a skillet. Add halved baby potatoes, cook until golden and tender. Season with salt and pepper.
  2. Cook the Steak: In the same skillet, add remaining olive oil. Season steak with salt and pepper, sear until browned. Remove from skillet.
  3. Prepare the Garlic Butter Sauce: Reduce heat, add butter, garlic, thyme, and rosemary. Stir until fragrant.
  4. Combine and Serve: Return steak and potatoes to the skillet, toss in the garlic butter sauce. Warm through, garnish with parsley, and serve.

Notes

  • For best results, use a cast iron skillet and allow the steak to reach room temperature before cooking.
  • You can use Yukon gold or red potatoes as substitutes for baby potatoes.
