For the Steak Bites:
- 1 1/4 pounds sirloin steak, cut into 1-inch cubes
- 3 tablespoons olive oil, divided
- Salt and black pepper, to taste
For the Potatoes:
- 1 1/2 pounds baby potatoes, halved
- 4 tablespoons unsalted butter
- 4 garlic cloves, minced
- 1 teaspoon fresh thyme or 1/2 teaspoon dried
- 1 teaspoon fresh rosemary or 1/2 teaspoon dried
- Fresh parsley, chopped, for garnish
Instructions
- Cook the Potatoes: Heat 2 tablespoons of olive oil in a skillet. Add halved baby potatoes, cook until golden and tender. Season with salt and pepper.
- Cook the Steak: In the same skillet, add remaining olive oil. Season steak with salt and pepper, sear until browned. Remove from skillet.
- Prepare the Garlic Butter Sauce: Reduce heat, add butter, garlic, thyme, and rosemary. Stir until fragrant.
- Combine and Serve: Return steak and potatoes to the skillet, toss in the garlic butter sauce. Warm through, garnish with parsley, and serve.
Notes
- For best results, use a cast iron skillet and allow the steak to reach room temperature before cooking.
- You can use Yukon gold or red potatoes as substitutes for baby potatoes.
