- 2 lbs baby potatoes
- ½ cup shredded cheddar cheese
- ¼ cup grated Parmesan cheese
- 2 tbsp chopped fresh parsley

Instructions
- Preheat Oven: Preheat oven to 425°F (220°C).
- Prepare Potatoes: Boil baby potatoes in salted water until fork-tender. Drain, place on a baking sheet, smash with a glass, drizzle with olive oil, season, and top with cheeses. Roast until crispy.
