For the Beef:
- 1 pound ground beef
- 2 tablespoons unsalted butter
- 3 cloves garlic, minced
- 1/2 cup honey BBQ sauce
- 2 tablespoons honey
- 1 teaspoon smoked paprika
- 1/2 teaspoon chili powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
For Serving:
- 8 small flour or corn tortillas
- 1 cup shredded cheddar cheese
- 1 cup shredded lettuce
- 1/2 cup diced tomatoes
- 1/4 cup sliced red onion
- 1/4 cup chopped fresh cilantro
- Lime wedges for serving
Instructions
- In a large skillet over medium heat, melt the butter and add the minced garlic. Sauté for 30 seconds until fragrant.
- Add the ground beef and cook, breaking it apart with a spoon, until browned and cooked through, about 6–7 minutes. Drain excess fat if needed.
- Stir in the honey BBQ sauce, honey, smoked paprika, chili powder, salt, and pepper. Reduce the heat to low and simmer for 3–4 minutes, allowing the flavors to meld.
- Warm the tortillas in a dry skillet or microwave until soft and pliable.
- Spoon the beef mixture into each tortilla and top with shredded cheese, lettuce, tomatoes, red onion, and cilantro.
- Serve immediately with lime wedges for squeezing over the top.

- For extra heat, add chopped jalapeños or a splash of hot sauce to the beef mixture.
