  • 1 pound ground beef
  • 2 tablespoons unsalted butter
  • 3 cloves garlic, minced
  • 1/2 cup honey BBQ sauce
  • 2 tablespoons honey
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

For Serving:

  • 8 small flour or corn tortillas
  • 1 cup shredded cheddar cheese
  • 1 cup shredded lettuce
  • 1/2 cup diced tomatoes
  • 1/4 cup sliced red onion
  • 1/4 cup chopped fresh cilantro
  • Lime wedges for serving

Instructions

  1. In a large skillet over medium heat, melt the butter and add the minced garlic. Sauté for 30 seconds until fragrant.
  2. Add the ground beef and cook, breaking it apart with a spoon, until browned and cooked through, about 6–7 minutes. Drain excess fat if needed.
  3. Stir in the honey BBQ sauce, honey, smoked paprika, chili powder, salt, and pepper. Reduce the heat to low and simmer for 3–4 minutes, allowing the flavors to meld.
  4. Warm the tortillas in a dry skillet or microwave until soft and pliable.
  5. Spoon the beef mixture into each tortilla and top with shredded cheese, lettuce, tomatoes, red onion, and cilantro.
  6. Serve immediately with lime wedges for squeezing over the top.

  • For extra heat, add chopped jalapeños or a splash of hot sauce to the beef mixture.
