Description

This fun and colorful Funfetti Ice Cream Cake combines a crunchy chocolate cookie crust with creamy strawberry ice cream mixed with whipped cream and rainbow sprinkles. Topped with a cloud of whipped cream and more sprinkles and candy, it’s a perfect no-bake dessert that’s festive, easy to make, and sure to delight for any celebration or summer treat.

Ingredients

Scale

Crust

  • 2 cups chocolate cookie crumbs
  • 1/4 cup melted butter

Ice Cream Layer

  • 4 cups strawberry ice cream
  • 1/2 cup whipped cream
  • 1/2 cup rainbow sprinkles

Topping

  • 1 cup whipped cream
  • 1/4 cup extra rainbow sprinkles
  • 1/2 cup Nerds candy (or your favorite colorful candies)

Instructions

  1. Prepare the crust: In a medium bowl, mix together the chocolate cookie crumbs and melted butter until well combined. Press the mixture firmly into the bottom of a 9-inch springform pan to form an even crust. Place the pan in the freezer for 10 to 15 minutes to allow the crust to set.
  2. Make the ice cream layer: In a large mixing bowl, let the strawberry ice cream soften until it’s spreadable but not melted. Gently fold in 1/2 cup of whipped cream and 1/2 cup of rainbow sprinkles to the softened ice cream mixture. Spread this evenly over the chilled chocolate cookie crust in the springform pan.
  3. Add the topping: Spread the remaining 1/2 cup whipped cream evenly over the ice cream layer to create a smooth, even topping. Then sprinkle with the extra 1/4 cup of rainbow sprinkles and scatter the 1/2 cup of Nerds candy or colorful candies on top for a fun, decorative touch.
  4. Freeze the cake: Place the assembled cake back into the freezer and let it freeze for at least 4 hours or until it is completely set and firm.
  5. Serve: Carefully remove the cake from the springform pan and slice it into 8 servings. Serve immediately and enjoy this colorful, funfetti-inspired ice cream cake.

Notes

  • For best results, use a 9-inch springform pan to easily remove the cake.
  • You can substitute the Nerds candy with any colorful small candies of your choice.
  • To soften ice cream quickly, leave it out at room temperature for about 10 minutes, but avoid melting it completely.
  • This cake must be kept frozen until serving to maintain its shape and texture.
  • Feel free to customize with different flavors of ice cream or sprinkles!
