Ingredients
Scale
Crust
- 2 cups chocolate cookie crumbs
- 1/4 cup melted butter
Ice Cream Layer
- 4 cups strawberry ice cream
- 1/2 cup whipped cream
- 1/2 cup rainbow sprinkles
Topping
- 1 cup whipped cream
- 1/4 cup extra rainbow sprinkles
- 1/2 cup Nerds candy (or your favorite colorful candies)
Instructions
- Prepare the crust: In a medium bowl, mix together the chocolate cookie crumbs and melted butter until well combined. Press the mixture firmly into the bottom of a 9-inch springform pan to form an even crust. Place the pan in the freezer for 10 to 15 minutes to allow the crust to set.
- Make the ice cream layer: In a large mixing bowl, let the strawberry ice cream soften until it’s spreadable but not melted. Gently fold in 1/2 cup of whipped cream and 1/2 cup of rainbow sprinkles to the softened ice cream mixture. Spread this evenly over the chilled chocolate cookie crust in the springform pan.
- Add the topping: Spread the remaining 1/2 cup whipped cream evenly over the ice cream layer to create a smooth, even topping. Then sprinkle with the extra 1/4 cup of rainbow sprinkles and scatter the 1/2 cup of Nerds candy or colorful candies on top for a fun, decorative touch.
- Freeze the cake: Place the assembled cake back into the freezer and let it freeze for at least 4 hours or until it is completely set and firm.
- Serve: Carefully remove the cake from the springform pan and slice it into 8 servings. Serve immediately and enjoy this colorful, funfetti-inspired ice cream cake.
Notes
- For best results, use a 9-inch springform pan to easily remove the cake.
- You can substitute the Nerds candy with any colorful small candies of your choice.
- To soften ice cream quickly, leave it out at room temperature for about 10 minutes, but avoid melting it completely.
- This cake must be kept frozen until serving to maintain its shape and texture.
- Feel free to customize with different flavors of ice cream or sprinkles!
