Instructions

  2. Make the ice cream layer: Allow the strawberry ice cream to soften until it is spreadable but not melted. In a large bowl, fold the softened ice cream together with 1/2 cup of whipped cream and 1/2 cup of rainbow sprinkles to distribute the sprinkles evenly. Spread this ice cream mixture evenly over the chilled cookie crust.
  3. Add the topping: Spread the remaining 1/2 cup of whipped cream over the ice cream layer smoothly. Then, sprinkle the top with the extra 1/4 cup of rainbow sprinkles and 1/2 cup Nerds candy (or your choice of colorful candies) for a festive finish.
