Ingredients
Scale
French Toast Muffins
- 6 slices of bread, cubed
- 3 large eggs
- 1 cup milk
- 1/4 cup sugar
- 1 teaspoon vanilla extract
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon salt
- 2 tablespoons butter, melted
- Powdered sugar, for dusting
Instructions
- Preheat the oven: Preheat the oven to 350°F (175°C) and grease a muffin tin thoroughly to prevent sticking.
- Mix wet ingredients: In a large bowl, whisk together the eggs, milk, sugar, vanilla extract, cinnamon, and salt until well combined and smooth.
- Coat the bread: Add the cubed bread pieces to the egg mixture, gently stirring to coat all pieces. Let the mixture sit for 5 minutes so the bread absorbs the custard thoroughly.
- Fill muffin tin: Evenly spoon the soaked bread mixture into the prepared muffin tin cups. Drizzle the melted butter over the tops of each filled muffin cup.
- Bake the muffins: Place the muffin tin in the preheated oven and bake for 18-20 minutes, or until the tops are golden brown and the muffins feel firm when gently pressed.
- Cool and serve: Allow the muffins to cool for a few minutes in the tin before carefully removing them. Dust with powdered sugar and serve warm.
Notes
- For best results, use slightly stale bread to help it absorb the custard without becoming too mushy.
- You can substitute milk with almond or oat milk for a dairy-free option.
- Try adding raisins or chopped nuts to the batter for added texture and flavor.
- These muffins can be stored in an airtight container in the refrigerator for up to 3 days and reheated before serving.
- Serve with maple syrup or fresh fruit for an extra special touch.
