Description

This French-Style Potato Salad is a vibrant and flavorful side dish featuring tender baby potatoes dressed in a tangy red wine vinaigrette. Enhanced with fresh herbs like parsley, chives, and optional dill, this salad offers a light and refreshing alternative to traditional mayo-based potato salads. Perfect served warm or at room temperature, it highlights classic French culinary techniques with simple, fresh ingredients.

Ingredients

Scale

Potatoes

  • 2 pounds baby potatoes or Yukon Gold potatoes

Dressing

  • 1/4 cup olive oil
  • 3 tablespoons red wine vinegar
  • 1 tablespoon Dijon mustard
  • 1 small shallot, finely minced
  • 1 clove garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Herbs

  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon fresh chives, chopped
  • 1 tablespoon fresh dill, chopped (optional)

Instructions

  1. Boil Potatoes: Place the potatoes in a large pot and cover with cold salted water. Bring the water to a boil, then reduce the heat and simmer until the potatoes are fork-tender, approximately 12 to 15 minutes.
  2. Drain and Slice: Drain the potatoes and let them cool slightly. While still warm, slice them into bite-sized pieces to allow better absorption of the dressing.
  3. Prepare Dressing: In a small bowl, whisk together the olive oil, red wine vinegar, Dijon mustard, minced shallot, garlic, salt, and black pepper until well combined.
  4. Toss Potatoes with Dressing: Transfer the warm sliced potatoes into a large bowl, pour the vinaigrette over them, and gently toss to coat all pieces evenly.
  5. Add Fresh Herbs: Fold in the chopped fresh parsley, chives, and dill (if using) to distribute the flavors throughout the salad.
  6. Adjust and Serve: Taste the salad and adjust seasoning as needed. Serve warm or at room temperature for best flavor.

Notes

  • Dress the potatoes while they are still warm to ensure they absorb the vinaigrette fully.
  • You can enhance texture and flavor by adding capers or lightly blanched green beans.
  • This salad pairs well with grilled meats or as part of a picnic spread.
