Ingredients
Scale
Potatoes
- 2 pounds baby potatoes or Yukon Gold potatoes
Dressing
- 1/4 cup olive oil
- 3 tablespoons red wine vinegar
- 1 tablespoon Dijon mustard
- 1 small shallot, finely minced
- 1 clove garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Herbs
- 2 tablespoons fresh parsley, chopped
- 1 tablespoon fresh chives, chopped
- 1 tablespoon fresh dill, chopped (optional)
Instructions
- Boil Potatoes: Place the potatoes in a large pot and cover with cold salted water. Bring the water to a boil, then reduce the heat and simmer until the potatoes are fork-tender, approximately 12 to 15 minutes.
- Drain and Slice: Drain the potatoes and let them cool slightly. While still warm, slice them into bite-sized pieces to allow better absorption of the dressing.
- Prepare Dressing: In a small bowl, whisk together the olive oil, red wine vinegar, Dijon mustard, minced shallot, garlic, salt, and black pepper until well combined.
- Toss Potatoes with Dressing: Transfer the warm sliced potatoes into a large bowl, pour the vinaigrette over them, and gently toss to coat all pieces evenly.
- Add Fresh Herbs: Fold in the chopped fresh parsley, chives, and dill (if using) to distribute the flavors throughout the salad.
- Adjust and Serve: Taste the salad and adjust seasoning as needed. Serve warm or at room temperature for best flavor.
Notes
- Dress the potatoes while they are still warm to ensure they absorb the vinaigrette fully.
- You can enhance texture and flavor by adding capers or lightly blanched green beans.
- This salad pairs well with grilled meats or as part of a picnic spread.
