- 6 cups low sodium beef broth
- 1 tablespoon Worcestershire sauce
- 1 bay leaf
- 1/2 teaspoon fresh thyme or 1/4 teaspoon dried thyme

Instructions
- Caramelize Onions: In a large pot or Dutch oven, heat the butter and olive oil over medium heat. Add the sliced onions, salt, pepper, and sugar. Cook, stirring frequently for 30 to 40 minutes, until the onions are deeply caramelized and golden brown.
- Deglaze Pot: Add the white wine or sherry, if using, and scrape the browned bits off the bottom of the pot to incorporate that rich flavor into the soup.
- Add Broth and Simmer: Stir in the beef broth, Worcestershire sauce, bay leaf, and thyme. Bring to a boil, then reduce heat and let simmer gently for 20 to 25 minutes. Remove the bay leaf before serving.
- Toast Baguette Slices: While the soup simmers, place the baguette slices under a broiler until golden brown. Optionally, rub garlic on toasted slices for extra flavor.
- Assemble and Broil: Ladle the hot soup into oven-safe bowls. Place a toasted baguette slice on top of each and cover generously with Gruyère cheese. Broil for 2 to 4 minutes until the cheese is melted and bubbly.
- Serve Hot: Carefully remove the bowls from the oven and serve immediately while the cheese is warm and gooey.
