  • 1 tablespoon unsalted butter
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 2 cups cremini or white mushrooms, sliced
  • 2 medium carrots, sliced

Sauce:

  • 1 tablespoon all-purpose flour
  • 1 cup dry white wine
  • 1 cup chicken broth
  • ½ cup heavy cream
  • 2 teaspoons Dijon mustard
  • 1 teaspoon fresh thyme leaves
  • 1 bay leaf
  • 2 tablespoons chopped fresh parsley for garnish

Instructions

  1. Preheat the oven: Preheat the oven to 375°F (190°C).
  2. Sear the chicken: Season chicken thighs with salt and pepper. Sear in a skillet until golden brown. Set aside.
  3. Cook the vegetables: Cook onions, carrots, garlic, and mushrooms in the same pan.
  4. Make the sauce: Sprinkle in flour, then add wine, broth, cream, mustard, thyme, and bay leaf. Stir to combine.
  5. Combine and bake: Return chicken to the pan, spoon sauce over it, cover, and bake for 35–40 minutes. Garnish with parsley before serving.
