Chicken:
- 6 bone-in, skin-on chicken thighs
- Salt and pepper to taste
Vegetables:
- 2 tablespoons olive oil
- 1 tablespoon unsalted butter
- 1 large onion, chopped
- 3 cloves garlic, minced
- 2 cups cremini or white mushrooms, sliced
- 2 medium carrots, sliced
Sauce:
- 1 tablespoon all-purpose flour
- 1 cup dry white wine
- 1 cup chicken broth
- ½ cup heavy cream
- 2 teaspoons Dijon mustard
- 1 teaspoon fresh thyme leaves
- 1 bay leaf
- 2 tablespoons chopped fresh parsley for garnish
Instructions
- Preheat the oven: Preheat the oven to 375°F (190°C).
- Sear the chicken: Season chicken thighs with salt and pepper. Sear in a skillet until golden brown. Set aside.
- Cook the vegetables: Cook onions, carrots, garlic, and mushrooms in the same pan.
- Make the sauce: Sprinkle in flour, then add wine, broth, cream, mustard, thyme, and bay leaf. Stir to combine.
- Combine and bake: Return chicken to the pan, spoon sauce over it, cover, and bake for 35–40 minutes. Garnish with parsley before serving.
