Soup Base

- 1 pound skinless salmon fillet, cut into 1-inch pieces
- 1 cup heavy cream
- 2 tablespoons fresh dill, chopped

Instructions
- Sauté Onion: In a large pot, melt the butter over medium heat. Add the diced onion and sauté for 3–4 minutes until softened and fragrant.
- Add Stock and Vegetables: Pour in the fish stock and bring it to a gentle simmer. Add the peeled and chopped potatoes, sliced carrots, bay leaf, salt, and black pepper. Cover the pot and allow the vegetables to simmer for 15–20 minutes until they become tender.
- Cook Salmon: Gently add the salmon pieces into the simmering pot. Cook for 5–7 minutes until the salmon turns opaque and flakes easily with a fork.
- Finish Soup: Reduce the heat to low and stir in the heavy cream along with the chopped fresh dill. Let the soup simmer for an additional 2–3 minutes, ensuring it does not boil.
- Serve: Remove the bay leaf. Taste the soup and adjust seasoning if necessary. Serve hot with extra fresh dill and lemon wedges on the side if desired.
Notes
- For a lighter version, substitute whole milk for the heavy cream to reduce fat content.
- If using salmon with skin, remove the skin before cutting the fish into chunks to avoid unwanted texture in the soup.
