Description

Delight in this vibrant Farmer’s Market Vegetarian Quesadillas recipe packed with fresh vegetables and melted reduced-fat sharp Cheddar cheese, perfectly crisped in a skillet to create a nutritious and satisfying meal that’s ready in just 30 minutes.

Ingredients

Scale

Vegetables

  • ½ cup chopped red bell pepper
  • ½ cup chopped zucchini
  • ½ cup chopped yellow squash
  • ½ cup chopped red onion
  • ½ cup chopped mushrooms

Other Ingredients

  • 1 tablespoon olive oil
  • Cooking spray
  • 6 (9-inch) whole wheat tortillas
  • 1 ¼ cups shredded reduced-fat sharp Cheddar cheese

Instructions

  1. Cook Vegetables: Heat olive oil in a skillet over medium-high heat. Add the chopped red bell pepper, zucchini, yellow squash, red onion, and mushrooms. Cook for about 7 minutes, stirring occasionally, until the vegetables are tender and slightly caramelized.
  2. Prepare Filling: Transfer the cooked vegetables to a bowl and set aside, keeping them warm for assembling the quesadillas.
  3. Assemble Quesadilla: Lightly coat the same skillet with cooking spray. Place one tortilla in the pan. Sprinkle half of the tortilla with shredded reduced-fat sharp Cheddar cheese, then evenly spread a portion of the cooked vegetables on top. Add a little more cheese over the vegetables, then cover with a second tortilla.
  4. Cook Quesadilla: Cook the quesadilla for 2 to 3 minutes on each side over medium heat, pressing lightly with a spatula, until the tortillas are golden brown and crispy and the cheese is fully melted.
  5. Serve: Remove the quesadilla from the skillet. Cut into 8 triangles using a sharp knife or pizza cutter and serve warm for the best flavor and texture.

Notes

  • Use whole wheat tortillas for added fiber and a healthier twist.
  • Feel free to substitute vegetables based on seasonal availability or personal preference.
  • To make it vegan, substitute cheese with a plant-based cheese alternative.
  • Cook vegetables just until tender to maintain some texture and freshness.
  • For an extra kick, serve with salsa, guacamole, or sour cream.
