Scale
Vegetables
- ½ cup chopped red bell pepper
- ½ cup chopped zucchini
- ½ cup chopped yellow squash
- ½ cup chopped red onion
- ½ cup chopped mushrooms
Other Ingredients
- 1 tablespoon olive oil
- Cooking spray
- 6 (9-inch) whole wheat tortillas
- 1 ¼ cups shredded reduced-fat sharp Cheddar cheese
Instructions
- Cook Vegetables: Heat olive oil in a skillet over medium-high heat. Add the chopped red bell pepper, zucchini, yellow squash, red onion, and mushrooms. Cook for about 7 minutes, stirring occasionally, until the vegetables are tender and slightly caramelized.
- Prepare Filling: Transfer the cooked vegetables to a bowl and set aside, keeping them warm for assembling the quesadillas.
- Assemble Quesadilla: Lightly coat the same skillet with cooking spray. Place one tortilla in the pan. Sprinkle half of the tortilla with shredded reduced-fat sharp Cheddar cheese, then evenly spread a portion of the cooked vegetables on top. Add a little more cheese over the vegetables, then cover with a second tortilla.
- Cook Quesadilla: Cook the quesadilla for 2 to 3 minutes on each side over medium heat, pressing lightly with a spatula, until the tortillas are golden brown and crispy and the cheese is fully melted.
- Serve: Remove the quesadilla from the skillet. Cut into 8 triangles using a sharp knife or pizza cutter and serve warm for the best flavor and texture.
Notes
- Use whole wheat tortillas for added fiber and a healthier twist.
- Feel free to substitute vegetables based on seasonal availability or personal preference.
- To make it vegan, substitute cheese with a plant-based cheese alternative.
