Description

A hearty and protein-packed Egg & Chicken Breakfast Sandwich featuring juicy seasoned chicken breasts, fluffy scrambled eggs, melty cheese, and fresh toppings all nestled within buttery toasted sandwich buns. Perfect for a delicious and satisfying breakfast or brunch.

Ingredients

Scale

Chicken

  • 2 chicken breasts (boneless and skinless)
  • Salt and pepper to taste
  • 1 teaspoon garlic powder (optional)
  • 1 teaspoon paprika (optional)
  • 1 tablespoon olive oil (for cooking)

Eggs & Cheese

  • 2 large eggs
  • Salt and pepper to taste (for eggs)
  • 1 tablespoon butter (for scrambling eggs and toasting buns)
  • 4 slices of your favorite cheese (cheddar, American, Swiss, or any variety)

Buns & Toppings

  • 4 sandwich buns (brioche, whole wheat, or any type of your choice)
  • Lettuce or spinach (optional)
  • Sliced tomato (optional)
  • Hot sauce or ketchup (optional)

Instructions

  1. Prepare the Chicken: Season the chicken breasts evenly with salt, pepper, paprika, and garlic powder if using to infuse flavor.
  2. Heat Skillet: Place a skillet over medium heat and add the olive oil to warm.
  3. Cook Chicken: Add the seasoned chicken breasts to the skillet and cook for 5-7 minutes on each side until golden brown and cooked through, reaching an internal temperature of 165°F (75°C).
  4. Rest and Slice Chicken: Remove chicken from skillet, allow to rest for a few minutes to retain juices, then slice into thin strips or pieces.
  5. Prepare Eggs: In a small bowl, whisk the eggs with a pinch of salt and pepper until fully combined.
  6. Scramble Eggs: Using the same or a clean skillet, melt butter over medium heat. Pour in beaten eggs and scramble gently for 2-3 minutes until fluffy and fully cooked. Remove from heat.
  7. Toast Buns: Slice sandwich buns in half and butter the cut sides. Toast them in the skillet or under the broiler until golden and crispy, about 1-2 minutes.
  8. Assemble Sandwich: On the bottom half of each toasted bun, layer a slice of cheese, followed by scrambled eggs, and then the sliced chicken pieces.
  9. Add Fresh Ingredients: If desired, add lettuce or spinach and sliced tomato for extra freshness and texture.
  10. Top and Serve: If preferred, drizzle hot sauce or ketchup over the contents, then place the top bun half on each sandwich. Serve warm and enjoy your filling breakfast sandwich.

Notes

  • You can substitute any cheese of your choice to vary flavor.
  • To speed up cooking, pound the chicken breasts to an even thickness.
  • Optional seasonings like paprika and garlic powder add extra zest but can be omitted to taste.
  • Use whole wheat or brioche buns depending on your preference for texture and flavor.
  • To make it spicier, add sliced jalapeños or a dash of hot sauce.
  • Leftover chicken can be used for sandwiches the next day, store refrigerated up to 2 days.
