Remaining Ingredients:
- 1 lb cooked chicken, shredded
- 2 cans (15 oz each) great northern or cannellini beans, drained and rinsed
- 1 can (4 oz) diced green chiles
- 4 cups low-sodium chicken broth
- 1 tsp chili powder
- 1 tsp ground cumin
- 1/2 tsp dried oregano
- Cayenne pepper, to taste
- 4 oz reduced-fat Monterey Jack cheese, shredded
- Chopped fresh cilantro, for garnish
Instructions
- Heat olive oil: In a large pot over medium heat, sauté onion, bell pepper, and garlic until softened.
- Add ingredients: Add shredded chicken, beans, green chiles, chicken broth, and spices. Bring to a simmer and cook for about 10 minutes to meld flavors and heat through.
