Ingredients
Scale
For the Ladyfinger Base
- 1 pack of vegan ladyfingers (or sponge cake)
- 1 cup strong brewed coffee, cooled
For the Cashew Cream
- 1 cup canned coconut milk (or other non-dairy milk)
- 1/2 cup cashews (soaked for at least 2 hours)
- 1/2 cup powdered sugar
- 1 tsp vanilla extract
- 2 tbsp maple syrup (or agave syrup)
For Finishing
- 1/4 cup cocoa powder (for dusting)
Instructions
- Prepare the Cashew Cream: Drain the soaked cashews and combine them with canned coconut milk, powdered sugar, vanilla extract, and maple syrup in a high-speed blender. Blend until the mixture is smooth and creamy with no lumps. Set this cashew cream aside.
- Assemble the Tiramisu: Quickly dip each vegan ladyfinger into the cooled strong brewed coffee, ensuring they absorb coffee but don’t become soggy. Arrange a layer of these dipped ladyfingers evenly in the bottom of your serving dish.
- Layer the Cream: Spread a generous layer of the prepared cashew cream over the coffee-soaked ladyfingers. Then, repeat the process to create a second layer—dip more ladyfingers in coffee, place them over the cream layer, and cover with remaining cashew cream.
- Chill: Cover the assembled tiramisu with plastic wrap or a lid and refrigerate for at least 4 hours, preferably overnight. This chilling time allows the flavors to meld and the dessert to set properly.
- Finish: Just before serving, dust the top layer generously with cocoa powder to give your tiramisu the classic chocolate finish.
Notes
- Soak cashews for at least 2 hours or overnight for the creamiest texture.
- Use strong coffee or espresso for the best flavor; let it cool completely before dipping the ladyfingers.
- If vegan ladyfingers are unavailable, use a vegan sponge cake sliced to size.
- Adjust sweetness by varying the amount of powdered sugar or maple syrup to taste.
- This dessert improves in flavor after chilling overnight, making it a great make-ahead option.
- Store leftovers covered in the refrigerator for up to 3 days.
