Description

Easy Mexican Pizzas are a delicious and quick recipe featuring crispy fried tortillas layered with refried beans, seasoned ground beef, melted cheese, and topped with fresh diced tomatoes and green onions. Perfect for a flavorful weeknight meal or casual Mexican-inspired dinner.

Ingredients

Scale

Meat Mixture

  • 1 lb ground beef
  • 1 chopped onion
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 2 tsp chili powder
  • 1 tsp cumin
  • 1 tsp dried cilantro
  • 1/4 tsp cayenne pepper
  • 1 tbsp minced garlic

Main Components

  • 16 small fajita size flour tortillas
  • 1 can refried beans
  • Taco sauce (quantity as desired)
  • 2 cups shredded Colby Jack cheese
  • Diced tomatoes (for topping)
  • Chopped green onions (for topping)
  • Vegetable oil (for frying tortillas)

Instructions

  1. Cook the Beef: In a large skillet over medium-high heat, brown the ground beef with the chopped onion until fully cooked. Drain any excess grease from the skillet.
  2. Season the Meat: Add salt, pepper, chili powder, cumin, dried cilantro, cayenne pepper, and minced garlic to the cooked beef mixture. Stir thoroughly to combine all the spices evenly.
  3. Fry the Tortillas: In a separate skillet, heat vegetable oil over medium heat and fry each flour tortilla until golden brown on both sides. Remove and drain on paper towels to remove excess oil.
  4. Assemble the Pizzas: Spread a layer of refried beans on the fried tortillas, then top with the seasoned beef and shredded cheese. Cover with another tortilla, add taco sauce and sprinkle more shredded cheese on top.
  5. Bake the Pizzas: Preheat the oven to 400°F (200°C) and bake the assembled pizzas for about 10 minutes until the cheese is melted and bubbly.
  6. Add Fresh Toppings: Remove the pizzas from the oven and top with diced tomatoes and chopped green onions just before serving.

Notes

  • For added spice, adjust the amount of cayenne pepper to taste.
  • You can substitute Colby Jack cheese with cheddar or a Mexican cheese blend for variation.
  • Use corn tortillas if you prefer a gluten-free option, but frying times may vary.
  • If a less oily pizza is desired, tortillas can be baked instead of fried until slightly crispy.
  • Leftover pizzas can be refrigerated and reheated in the oven for best texture retention.
