Ingredients
Scale
Noodles and Sauce
- 8 oz ramen noodles or udon noodles
- 1 tablespoon sesame oil
- 1 cup chopped kimchi (with juice)
- 1 tablespoon gochujang (Korean chili paste)
- 2 teaspoons soy sauce
- 1 teaspoon rice vinegar
- 2 teaspoons sugar
- 2 cloves garlic, minced
- 2 green onions, sliced
- 1 tablespoon toasted sesame seeds
Egg Topping (Optional)
- 1 egg
- 1 tablespoon vegetable oil (for frying egg)
Garnish (Optional)
- Chopped cilantro or additional green onions
Instructions
- Cook the noodles: Cook the ramen or udon noodles according to the package instructions until al dente. Drain and set aside to prepare the sauce and other ingredients.
- Sauté kimchi and garlic: Heat sesame oil in a large skillet or wok over medium heat. Add the chopped kimchi and minced garlic, then sauté for 2 to 3 minutes until fragrant and slightly softened.
- Add sauce ingredients: Stir in the gochujang, soy sauce, rice vinegar, and sugar into the skillet with the kimchi mixture. Cook for an additional minute to let the flavors meld.
- Toss noodles: Add the cooked noodles to the skillet with the kimchi sauce. Toss everything together thoroughly until the noodles are coated and heated through.
- Prepare the egg (optional): In a separate small pan, heat vegetable oil over medium heat. Fry the egg until the whites are set but the yolk remains runny for a creamy texture.
- Plate and garnish: Serve the kimchi noodles on plates or bowls. Top each serving with the fried egg, then sprinkle with the sliced green onions, toasted sesame seeds, and optional chopped cilantro. Serve immediately while hot.
Notes
- For more heat, increase the gochujang quantity or add a splash of chili oil.
- You can substitute ramen noodles with rice noodles or soba noodles according to your preference.
- Add tofu or sautéed mushrooms for a vegetarian protein boost if omitting the egg.
