Pork Carnitas:

  • 3 pounds boneless pork shoulder (pork butt), cut into large chunks
  • 1 tablespoon olive oil
  • 1 tablespoon chili powder
  • 2 teaspoons ground cumin
  • 1 teaspoon dried oregano
  • 1 teaspoon smoked paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 4 garlic cloves, minced
  • 1 onion, chopped
  • 1 jalapeño, seeded and diced (optional)
  • 3/4 cup orange juice
  • 1/4 cup lime juice

Instructions

  1. Rub the Pork: Rub the pork shoulder with olive oil, chili powder, cumin, oregano, paprika, salt, and pepper.
  2. Combine Ingredients: Place the seasoned pork in the crockpot with garlic, onion, jalapeño, orange juice, and lime juice.
  3. Cook: Cook on low for 8–10 hours or on high for 5–6 hours until tender. Shred the pork.
  4. Crisp (Optional): Broil shredded pork for 5–7 minutes for crispy edges. Return to slow cooker with cooking juices.
