Pork Carnitas:
- 3 pounds boneless pork shoulder (pork butt), cut into large chunks
- 1 tablespoon olive oil
- 1 tablespoon chili powder
- 2 teaspoons ground cumin
- 1 teaspoon dried oregano
- 1 teaspoon smoked paprika
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 4 garlic cloves, minced
- 1 onion, chopped
- 1 jalapeño, seeded and diced (optional)
- 3/4 cup orange juice
- 1/4 cup lime juice
Instructions
- Rub the Pork: Rub the pork shoulder with olive oil, chili powder, cumin, oregano, paprika, salt, and pepper.
- Combine Ingredients: Place the seasoned pork in the crockpot with garlic, onion, jalapeño, orange juice, and lime juice.
- Cook: Cook on low for 8–10 hours or on high for 5–6 hours until tender. Shred the pork.
- Crisp (Optional): Broil shredded pork for 5–7 minutes for crispy edges. Return to slow cooker with cooking juices.
