Filling Ingredients
- 2 cups cooked chicken, shredded or chunked
- 1 (10.5 oz) can cream of chicken soup
- 1 cup milk (whole milk or 2%)
- 1 teaspoon dried thyme
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- ¼ teaspoon kosher salt
- ¼ teaspoon black pepper
- 1 (12 oz) bag frozen mixed vegetables, thawed completely
Bisquick Topping
- 1 ½ cups Bisquick baking mix
- ½ cup milk (whole milk or 2%)
- 1 large egg
Instructions
- Preheat and Prep: Preheat your oven to 400°F. Lightly spray a deep-dish 9-inch pie plate with nonstick cooking spray and set it aside to prepare for the filling.
- Combine Filling Ingredients: In a large mixing bowl, combine the cooked chicken, cream of chicken soup, 1 cup milk, dried thyme, garlic powder, onion powder, kosher salt, and black pepper. Stir thoroughly until all ingredients are well blended. Then fold in the thawed mixed vegetables.
- Pour Filling: Transfer the chicken and vegetable mixture into the prepared pie plate, spreading it out evenly.
- Make Bisquick Topping: In a medium bowl, mix together the Bisquick baking mix, ½ cup milk, and the large egg until the batter is smooth and well combined.
- Top and Bake: Pour the Bisquick batter evenly over the chicken filling in the pie plate. Place in the preheated oven and bake for 25 to 30 minutes, or until the top is golden brown and a toothpick inserted into the biscuit topping comes out clean. If the topping begins to brown too quickly, loosely cover with foil toward the end of baking.
- Serve: Remove the pot pie from the oven and allow it to cool for about 5 minutes before serving hot. Enjoy your hearty and comforting meal!
Notes
- The filling can be customized with other favorite vegetables like peas or carrots.
- Using cooked leftover chicken or rotisserie chicken saves time.
- For a richer biscuit topping, use whole milk instead of 2% milk.
- Ensure frozen vegetables are thoroughly thawed to avoid excess water in the filling.
- Covering with foil toward the end prevents the biscuit topping from burning.
- This recipe serves 6, but can be easily adjusted for smaller portions.
