Ingredients
Beef:
1 pound beef stew meat or sirloin (cut into bite-sized pieces)
Other:
1 tablespoon olive oil, 1 small onion (diced), 2 cloves garlic (minced), 3 cups beef broth, 1 tablespoon Worcestershire sauce, 1 teaspoon onion powder, 1/2 teaspoon dried thyme, salt and pepper to taste, 8 ounces egg noodles, 1 tablespoon cornstarch mixed with 2 tablespoons cold water (optional, for thickening), chopped parsley for garnish (optional)
Instructions
- Sear the Beef: In a large pot or deep skillet, heat olive oil over medium-high heat. Add the beef and sear until browned on all sides, about 5–6 minutes. Remove beef and set aside.
- Sauté Onion and Garlic: In the same pot, add the diced onion and sauté until soft, about 3 minutes. Stir in the garlic and cook for 30 seconds.
- Cook the Beef: Return the beef to the pot and add the beef broth, Worcestershire sauce, onion powder, thyme, salt, and pepper. Bring to a boil, then reduce heat to low, cover, and simmer for 30–35 minutes until the beef is tender.
- Add Noodles: Add the egg noodles and stir to submerge them in the broth. Cover and cook for 8–10 minutes, stirring occasionally, until noodles are tender and most of the liquid is absorbed.
- Thicken (Optional): If a thicker sauce is desired, stir in the cornstarch slurry and simmer for another 2–3 minutes.
- Serve: Serve hot, garnished with chopped parsley if desired.
Notes
- For extra richness, stir in a splash of heavy cream or a dollop of sour cream before serving.
- This recipe also works well in a slow cooker—just add the noodles during the last 30 minutes of cooking.
