Description

Easter Snack Mix is a delightful and colorful treat perfect for spring celebrations. This sweet and crunchy mix combines white chocolate, cereals, pretzels, nuts, and festive peanut butter and milk chocolate M&M’s in a simple no-bake recipe that sets quickly to create a fun, crowd-pleasing snack.

Ingredients

Scale

Chocolate Mixture

  • 3 cups white chocolate chips
  • 1 tablespoon coconut oil (optional)

Dry Ingredients

  • 4 cups multigrain Cheerios
  • 4 cups Rice Chex cereal
  • 2 cups pretzel sticks
  • 1 cup roasted cashews (optional)

Mix-ins and Toppings

  • 1 (9-ounce) bag peanut butter M&M eggs
  • 1 cup pastel milk chocolate M&M’s
  • ½ cup shredded, sweetened coconut
  • Extra white chocolate chips, for topping (optional)

Instructions

  1. Prepare Baking Sheet: Line a baking sheet with parchment paper to prevent sticking and facilitate easy cleanup.
  2. Melt White Chocolate: Place the white chocolate chips and coconut oil (if using) in a microwave-safe bowl.
  3. Microwave Chocolate: Heat the mixture in 30-second intervals, stirring after each, until the chocolate is melted and smooth.
  4. Combine Dry Ingredients: On the prepared baking sheet, mix together the Cheerios, Rice Chex cereal, pretzel sticks, and roasted cashews if using. Toss gently to blend evenly.
  5. Add Half the M&M’s: Incorporate half of the peanut butter and pastel milk chocolate M&M’s into the cereal mixture.
  6. Drizzle White Chocolate: Pour the melted white chocolate over the dry ingredients evenly.
  7. Toss to Coat: Use a spatula or large spoon to gently and quickly toss the mixture so all pieces are coated with white chocolate.
  8. Add Remaining M&M’s and Coconut: Sprinkle in the remaining peanut butter and milk chocolate M&M’s and gently toss again. Then, add shredded coconut and toss lightly if desired.
  9. Add Optional Toppings: If desired, sprinkle additional white chocolate chips on top for extra texture and sweetness.
  10. Set the Mixture: Allow the snack mix to set for 20 to 30 minutes at room temperature until the chocolate hardens.
  11. Store: Transfer the set snack mix to a large bowl, covered jar, or resealable plastic bag. It can be made a day or two ahead of time for convenience.

Notes

  • Coconut oil is optional but helps white chocolate firm up better.
  • You can omit cashews if allergic or substitute with another nut.
  • Use parchment paper to make clean-up easy and prevent sticking.
  • The mix sets at room temperature, no refrigeration needed but can be stored in a cool place.
